                     Lady Baltimore Cake and Frosting

  1         cup  butter
  2         cups  fine granulated sugar
  4         cups  pastry flour
  4         teaspoons  baking powder
  2         cups  milk
  2         teaspoons  almond extract
  8         egg whites beaten stiff and dry
                        Filling:
  3         cups  sugar
     3/4   cup  boiling water
  4         egg whites beaten until stiff
     1/2   teaspoon  tartaric acid
  2         cups  coarse chopped walnuts
  2         cups  seeded raisins (cut into pieces)
             Sherry (optional)

Cream butter, add gradually fine granulated sugar, beating constantly by 
hand until creamy. 

Sift together pastry flour, and baking powder. 

Add alternately to first mix with milk; add both slowly while beating briskly. 
Add almond extract, and then fold in whites, which were beaten until stiff 
and dry. Bake in 3 large and buttered floured cake pans for 20 minutes in 
a moderate oven. 

Put together with filling for Lady Baltimore Cake and spread top of cake 
with the same. 

Filling:
Boil sugar with boiling water. Boil until spins a thread or to 280F. Pour 
syrup in a fine stream on the whites of 4 eggs beaten until stiff. Beat 
constantly while doing this. Add 1/2-teaspoon tartaric acid and continue 
beating. Then add coarse chopped walnuts and seeded raisins, which 
were cut into pieces. 

NOTE: in the older recipes the nuts and the raisins were soaked in fine 
old sherry before adding. Use this as the filling and frosting.
