Rhubarb Muffins

1 1/2 cups brown sugar
2/3 cup oil
1 egg
1 cup buttermilk
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking soda
2 1/2 cups flour
1 1/2 cups diced rhubarb
1/2 cup chopped nuts
Topping:
1/2 cup nuts -- chopped
1/3 cup sugar
1 1/2 teaspoons flour
1 tablespoon butter -- melted
Combine ingredients in order. Fill 2/3 full, paper-lined muffin tins or pour
batter into 9x13 cake pan. Sprinkle with topping. Bake in preheated 400°F
oven for 20 to 25 minutes.
Topping:
Mix together; sprinkle over unbaked muffins. Makes 24 Muffins or 2 loaves.
Yield:
"2 loaves"
